When I saw American GIs dipping the flesh of young coconuts into wasabi-infused soy sauce I was puzzled.
It was my buddy Alec Ee – whose photographs have earned him international renown – who told me that they do it because it tastes like salmon sashimi!
But it was Alicia who told me about Zen, where the salmon sashimi is created entirely from non-fish products.
